I spotted this in the lane at Watts Bros in Glasgow today.

and here i was thinkin there would be four meals to delight upon...

whelp... let me share our supper...

A very delectable..

chicken stew..

lets see..

five carrots.. half of the celery stalk
an onion or two... all chopped in big chunks and sauteed in butta and salt n peppa....yummayumyum...

then.. while that was goin... the chicken was cookin... and... i was peelin and choppin potatoes into bite size bits... probably bout 4 or 5 potatoes...(optional)

after the sauteed ingredients caramalized and.. got good n yummy... take a few bites to savor.. blow on it first...

then go ahead and drop in the cooked chicken... and the chopped up potatoes...

into the 12 qt pot? add hot water... chicken stock if ya like... and... a cup or two of rice...(watch for pebbles) or... add a cup or two of pasta.. make sure to cover the pot after its brought to a boil.... and lower the temp to simmer.... and let it cook for a good half hour...

taste test.. may need some salt.n peppa..
maybe a lil parsley... or thyme.... or both... have fun with it...

you can also thicken with a bit of corn starch... and cold water... (bring to boil and stir)

any recipes to share???

Picadillo con arroz blanco(groundbeef and white rice)
cook ground beef in a sautee pan with onions, green pepper, garlic, salt and pepper, complete seasoning.
When it browns I add diced tomatoes and 1 can of tomatoe sauce I also add diced cooked (fried) potatoes.

Serve it with white rice...no time for black beans so I making a salad...

I Love you chicken stew Jaimekins will try it when the kids have a cold...Maybe tomorrow I'll do Chicken fricasee...?

Chili:

- in a pot fry up chopped onions in olive oik

- Brown some ground mince in the same pot (make sure it's broken up - no clumps)

- reduce heat to a simmer

- steam a chirizo sausage or two
(8min if - fresh - 12 min if frozen)
then cut into bite size pieces

- take a good steak and chop it into cubes
and fry it quickly to rare and set aside

- add some beef stock, and chopped garlic to the mince

- add the sausage

- add diced tomatoes and a little tomato paste

- add water - a soupy mix is what you're aiming for

- add beans - lots of different kinds

- add smoked chipotles (no other spices are required as these dominate the flavour

- add chopped red and green sweet peppers

- add a large squirt of lime juice

- add some brown sugar (careful - not a lot)

- add the cubed steak

- simmer for half an hour or so 'til it's the consistency of a stew

- eat (then spend the next six hours alone)

you aint gettn any younger.. you might as well go getchya a gal and grow ole together... oiy.. i was just coachn ma soldier boy a few hours ago to get a date before the spring break so his lady friend will have time to gussie up for the prom.. oh, he's aged me... and..then.. we went through the ole pictures.. of my befores an afters... i told him.. she might surprise ya.. when she gussies up.. youd never thunk it when i did...

tonight,..

just round meat broiled..

bbq sauce or ketchup on the side..

home fries

cleaned potatoes(skins on)
speared cut
massaged in oil n salt n peppa..

baked on cookie sheet 425-450fdegrees
till crispy and golden..

and a salad on the side...with ranch or french..

and some homemade chocolate chip cookies fresh baked ..pipin hot!
i know.. odd? its a project we started yesterday.. double batched.. it keeps in the fridge or freezer.
i just bake a few at a time.. only what we need..

thanks for the new recipes guys! you brightened my night! i know.. the small thangs get me..

We have been having a few problems with primary schools in Fife as of late, when the weather gets milder they start and make for the outside but as soon as the weather gets cold again, back they come!

We closed a place just before Christmas because of a severe infestation of mice, the guy could have dealt with them like the pic and we woild never have known!

hmmm... tonight? tonight?!

i ate out! first time in...
just the dolla menu... we were pressed for time with our schedules and.. boy, was i blessed to have a break!!! today was a lil weird anyway.. everything was goin kookie.
it started at lunch when.. no spoon in sight for our potato stew.. had to pack up the kiddies in a swift jiffie and pick up the others early at school to meet hubby and not miss the bus to give him money for an appointtment.. got home keys in house.. me outside.. him not home... not good.
and he decided to take the long way home and go for a joy ride... whilst me waitn...
and... got to a kiddie event.. long drive.. and apparently it wasnt that day.. still wonderin what happened with that.. dunno.. had to pick up groceries.. and... a diaper changing that i THOUGHT was a poo.. in the van;far from home... got all undone.. and found it was as dry as a desert. ...and stupidly i took all my kids to the store for a 'quick' trip...
3 toddler tantrums later....
that stupid lil $1 sandwich was the best damn thang that ever happened to me..

boy,... if gas is holdin ya back... you never met my hubby.. i swear i need a ventin system for the upstairs.. theres been days.. that i'd just as soon stay downstairs for the cloud singes ma nosehairs..



ooooh, i got me oreos. i havent bought a ready made snack in sooo long. dont worry, i figure they will be gone by tomorrow.. the vultures will not allow such sugary substances to go unchecked for long!!!

Tonight....Barbeque...chicken!!!! broiled.. charred just right... it will curl your tongue in delight..

And... yummy corn. mash tators...

seein how we are short in cash.. i was able to find a lil meal that had been hidden in my cupboard...
for a wee lunch..
... and...

shoooooo weeee!

it was thai rice noodles with the crunchy peanut seasoning.. and d@mn it was good!!
never woulda thunk it.. it was a treasure!

made some hoagies for a meal..
somethin simple and totally bad for us..
Big hotdog lookn buns..
bologna..
lettuce..
cheese...
pickles
mayo...
tomato optional..

yumma yum.. its a treat to me...


and... last nite.. was potato clam chowder.. and lets just say...yummy.. nice and chunky with the veggies.. and the kids all helped me this time.. they were all peelin... what a treat for me!!!! and they loved doin it!! thank goodness! thats a LOT of peelin, my friends..
its amazin when we cooperate.. how much can get done in a matter of minutes... and.. with joy! they also get to learn how to cook with mum... and... thats an important time... they can learn how i just throw all their food in a pot.. and... experiment... and.. no rules with me... a lil bit a dis.. a lil bit o dat...
tip with my chowder...
bacon!! its a twang that...mmmmm,mmmmm,mmmmm....

and sauteed.. onions and carrots...yummm
